I think the author is trying to imply that the exact structure of Ω (ie, the elements of Ω) doesn't matter since we can relabel the elements with some index set of cardinality |Ω|, so if Ω={"head","tails"}, we can just relabel Ω as {0,1} and talk about P(Ω=k) for k=0,1. What really matters is the probability measure on the sample space Ω
